I am on my third week of being gluten, corn, and peanut free.
Amazing so far!
I have really “depuffed” myself. Since eliminating the gluten and corn, my body is not all inflamed and bloated like before.
I thought that puffiness was normal!
And the results are clear; people comment on how I look like I’ve lost ten pounds. However the best part is the difference in how I feel, which is more clear-headed, energetic, and strong.
I must say, I was quite the peanut butter addict. Even though I knew I had a peanut allergy, I would still eat it and then feel flu symptoms after. I DO miss peanut butter. But luckily, I love cashew and almond butters!
And bye-bye cornchips. cornmeal. cornbread. corndogs. cornsalsa. polenta. corncakes. You will be sorely missed.
But there are so many healthy wonderful foods …more veggies and fruits and grains and nuts…bring ’em on!
Here is my current morning smoothie recipe. My smoothies change often, and that is what’s so great about smoothies…you can switch ’em up and add different fruits and veggies.
Morning smoothie=lots of energy, fiber, omega-3 love and goodness!
1 tbsp chia seed
2 tbsp flax meal
1 C coconut milk
1 tsp coconut oil
sometimes a handful of spinach
To the forest!
